Chewy Double Chocolate Chip Cookies

Ingredients:
2 cups margarine (softened, not melted)
2 cups brown sugar (light or dark, packed)
1 cup white sugar
2 tablespoons molasses
4 large eggs (room temp)
2 teaspoons vanilla extract
5 cups all-purpose flour
2 teaspoons baking soda
1 ½ teaspoons salt
3 cups semi-sweet chocolate chips
Instructions:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Cream margarine + sugars: In a large mixing bowl, beat together the margarine, brown sugar, white sugar, and molasses until light and fluffy (2–3 minutes).
Add eggs & vanilla: Mix in eggs one at a time, then stir in vanilla extract.
Mix dry ingredients: In another bowl, whisk together flour, baking soda, and salt. Slowly add to the wet mixture until just combined (don’t overmix).
Stir in chocolate chips: Fold in the chips evenly.
Scoop & flatten slightly: Drop ¼ cup dough balls (big cookies help them stay soft) onto baking sheets. Lightly press each ball down with your palm for a flat cookie. Leave space — these spread!
Bake 11–13 minutes, until edges are just golden but centers look slightly underdone.
Cool on pan for 5 minutes, then transfer to wire rack. The centers will finish setting as they cool, leaving you with soft, chewy middles and flat, bakery-style cookies.
