Chewy Chocolate Chip Cookies (Alison’s Recipe)
Have you ever noticed how some recipes turn out so good that one cookie is never enough? That’s this one. The cookie you swear you’ll just “taste test”… and then somehow three more disappear before the tray even cools.
For the longest time, I hated making just one batch because it barely lasted a day in our house. But two full batches felt like way too much commitment (and way too much butter 😂). So I finally landed on the perfect in-between.
This recipe makes plenty. Enough for the kids to sneak seconds, enough to share with friends or tuck into a lunchbox, and still enough left over for me to have with my coffee the next morning. And not once have I ever been disappointed with how fast they vanish.
These are hands-down the “no one can eat just one” cookies around here and honestly, I wouldn’t have it any other way.

Ingredients
2cups sugar
2 large or 3 small eggs
1/2 cup corn syrup
1 1/2 cup margarine
2tsp Vanilla
1 tsp salt
4tsp Baking soda
2tsp Baking powder
4 1/2cups flour
2 cups choc chips (1-350gram bag)
Instructions
Preheat oven to 350 degrees
Cream together the sugars, margarine/ butter, corn syrup, and vanilla extract in a large mixing bowl.
When the mixture is well combined, add eggs one at a time, and beat well.
Add in the flour, salt, and baking soda until well mixed.
Combine add- ins.
Drop by rounded tablespoons onto parchment paper-protected cookie sheets.
Bake for about 10 minutes, or until edges are lightly browned. The tops will look slightly undercooked, but allow them to cool slightly for 5-10 minutes on the cookie sheet before removing. This will allow them to fully cook and set! Make sure you follow this step and do not overcook.
Transfer to wire rack or cool surface to cool down completely after.
IMPORTANT HACK: I let my cookeis rest on my stove top until the next pan is almost ready to come out. This is just the rhythm I got into!
I noticed this recipe makes around 5 dozen cookies when using an ice cream scooper. That is give or take the amount of cookie dough my kids and husband steal while “helping” me bake!
